Black Bean Brownies
I love the SkinnyTaste cookbook (meaning, I love when someone else makes the recipes and I get to eat them)! This recipe comes from the website, which has tons of other great recipes! I’ve made this one a few times now, and if I can do it… so can you! :)
These brownies are amazing and a little healthier than your average brownie, because they’re made with black beans! Before you get all weirded out, let me point a few things:
– NO, they do not taste like black beans at all.
– YES, you could feed these to someone and they would never know the difference… but…
– Though they are super moist and fudgey, they have a tendency to crumble. (I like to warm mine up and eat with a fork, so this solves the problem.)
– Make sure you blend the beans well with an immersion blender before you mix the other ingredients in. They should be a smooth paste consistency!
– There is coffee in the recipe, but you don’t taste it at all! (Unless you put in too much like I did one time…)
– The recipe says to use parchment paper… but I find they turn out the same with or without it.
